I LOVE to Cook and I am Foodie! :)

Like it the Title, I LOVE to cook and I am a Foodie! Seriously, I love trying new recipes every weekend since that is the only time I have to cook. I have made authentic Mexican chicken enchiladas, Better than Sex Cake, Chili Verde, Elvis sandwich and my signature Mexican Tacos which I could every other weekend at my daughter’s request. :)

This last year, I have my first Thanksgiving turkey, which I was really nervous about doing because I have never cooked a bird before! It turned out delicious! :) My goal is to own my own diner. Which someday I will do and be featured on Diners, Drive-ins and Dives. :) I love to watch the Food Network – my favorite shows aside from DDD, is Unwrapped, Guys Big Bite, Mexican Made Easy, The Heelys. I also like the Cooking Channel – Foodography, Extra Virgin, Bitchin Kitchen.

I would LOVE to have Guy Fieri job on Diners, Drive-ins and Dives, because I love to travel everywhere and try different foods! There was this dish he had tried at this restuarant in Cincinnati made with spaghetti pasta and chili and cheese. I want to try making it since I don’t know when I will make it out there LOL!

I am always looking for new recipes to try. I think I am going to do Mexican Fried Fish, Tinga, and I really want to make fried chicken and my own signature red chili.

My favorite foods are authentic Mexican tripa tacos from the street vendors, Tres Leches cake, Mole & Menudo. Spaetzle & German potato salad and more recently Schinkennudeln, which is also German. My mother is German so I grew up eating those dishes and I lived in Mexico when I was married, so those two types of food I love!

I am not picky about foods I don’t like, I don’t like cooked mushrooms but I want to change that. I also LOVE caramelized onions. I love to play up my recipes too. For example today, I made tuna on bread I used Jalapeno sauce, chili powder and Miracle Whip…I love sweet and spicy and it was good!

I LOVE FOOD! : D





3 Day Shakeology Cleanse

So, in order to prep for my Cruise I will be doing a 3 Day Shakeology Cleanse. I will keep y’all updated. But I am bound to lose 2-7lbs and a couple of inches around the mid-section. Whats so great about this cleanse is I will not be hungry! Which is my main concern. Since I am Foodie : D I just ordered it from another coach since I like to keep my monthly supply of Shakeology for myself. :) Like I said once I do the Cleanse I will keep y’all posted about my results. ;)

Snow in the Spring – only in Utah!

Utah has the strangest weather. I have lived here since 1995-1996 and the weather just gets weirder every year, which I tribute to Global Warming. It is SPRING TIME and are still getting snow! Last Spring right before Easter my daughter was able to go sledding in the backyard.

I am really tired of the snow. I am ready for sun and fun. That is okay, at the end of April we are headed to Arizona and in May we are going on a cruise so I can enjoy a tropical drink on the ocean like last year. I am very excited! : D

Interview: Anna Parkin (Artist)

Artist Anna Parkin:
My name is Anna Parkin & I live in Utah.
I am stay-at-home mother who spends every spare moment I have towards my art.
I am married. Been married for 4 years and have 2 wonderful children. One is 3 years old and the other is 18 months old.
I have been in love with art as far back as I can remember. I remember drawing while Bob Ross painted on the TV in the background. I took some art classes in Jr. High and High School but I’m pretty much self taught.
I’ve always drawn and created things from the scraps I found around my house, but painting was introduced to me in junior high. I still remember my first set of paint brushes and the way the paint smelt. My very first painting was of a girl I found in the National Geographic. Though the picture was of this girl who had the most strikingly beautiful hazel eyes I ended up painting her in black and white. I remember loving this painting but like a lot of things in my life I ended up burning her along with some pretty intense pages from my journals.
My inspiration…..comes from my desire to bring beauty, understanding and enlightenment into the world. To ignite an individuals creativity. Maybe to help them find there path in life.
My favorite painting…it would have to be of that girl I painted in Junior High. It was like I was painting two people. Her and myself. It was then I found the purpose of my art. Discovery.
My favorite painter has always been Salvidor Dali! He was fearless. His paintings so involved. They made my mind wonder in search for a new perspective on life.
I see myself 5 years from now an artist who is actively involved in helping individuals find that creative center within themselves. An active collaborative artist. Bringing ideas together, many perspectives together and hopefully bring about some change in how we view our lives.

Above is the words of Anna Parkin the Artist. I love her work! Posted on the left is her keepsake box and painting that I had purchased from her. The painting is called ‘The Elegance of Time’ I was mesmerized by the painting when I saw it and had to have it! Now it is hanging up in my room where I can look at it everyday and I use my keepsake box for special things since my other box broke.

Pictured below is a new painting that she is working on for me. This picture is very angelic and spiritual to me and represents the love my daughter and myself have for each other. This picture was taken in 2009, Liz first year of Girl Scouts, and the first Girl Scout Camp we ever went to. Some random woman took the picture of us on her cell phone. We had no service so she had to send it to me when we were done with the camp and we both had service again. I am excited for the results! : D

I recommend her if you are looking for a special kind of art, because hers is really one of a kind. :)

Mission Beach in San Diego California

Its been a long time since I have been to a beach, Mission Beach from what I understand is a popular beach in San Diego, California. My daughter keeps asking me for us to go to a beach. There are a lot of Mission Beach residential front properties for rent or purchase.

Personally, I don’t know if I would want a beach front property. I don’t go to the beach hardly ever. I would though like to a be a Realtor in that area ;) I would like to maybe vacation there since there is a board walk and on the south side of Mission Beach is quieter than the north side from what I understand.

My new favorite (German) Dish: Schinkennudeln

My mother is German so I grew up eating a lot of fabulous German dishes, she recently made this for the family, and although I have had it before, this time I absolutely loved it! : D Its made with egg noodles, cooked ham, and scrambled egg. It is so simple and so delicious! She made me a big Tupperware full and I have been eating it for breakfast, lunch, leftovers, snack LOL! Today alone, I have three dishes! I also enjoy it with Jalapeno sauce! I HIGHLY recommend it. My new fave! :)

As Seen on TV Product Review: Cami Secret

So I bought this, because I don’t like to show off my cleavage with low cut tops. But before I bought it, I purchased a pair of large lacy white underwear, cut a square out of them and used some double sided tape to stick it to my bra and it worked great! So when I got the product and used the white cami secret to wear with a low cut red shirt to work one day I was disappointed. See how it works it clips to the top of your bra. But anyway, it kept bunching up and showing my bra! LOL! So I prefer my home made method of a cami secret. I also didn’t like how it made me look because it was so high up under my shirt. I may use double sided tape to make it work better. But anyway I think for these its to each his own.

My next As Seen on TV products I am interested in are the Pajama Jeans, Ahhh Bra, Xpress Redi Set Go and the NuWave Oven. So stay tuned for more reviews. ;)

A Day in the life of a Customer Service agent

In October 2004, I started my first customer service job as a temp for a big benefits corporation. I did benefits enrollment for them for 6 months and then they had the nerve to not hire me on because of get this, “lack of customer service experience”…fast forward to NOW, with 6+ years in the industry, but for a transportation company. I no longer lack customer service experience! LOL!

I sometimes ask myself why do I continue to do customer service work? People can sometimes be mean and down right condescending! And you have to contain your utmost composure and be the nicest possible. But now I know I think this is the kind of work I need to be doing. Because I just have way too much energy and talk way too much to not be on the phone LOL! I also enjoy turning a pissed off customer into a happy one! I have received candy and BBQ sauce when I worked in the Billing department for making customers happy when I adjusted a charge or just waived a fee. I have received compliments for them appreciating my work and wanting everyone else know too. Plus on top of that, I have always been into Network Marketing which requires you to do some of that type of talking when speaking to prospects.

My favorite customer service job besides what I do now. Is making outbound calls in a sales type self-development industry. I LOVED that job! But the pay and hours sucked! I will forever miss that job. I have had a total of 3 different call center jobs with 3 different companies and worked in 7 different departments. I also have experience in inbound and outbound calling.

This gets more interesting, LOL. I live in Utah! And no I am not a polygamist or LDS. I am actually from Vegas :) . Back to Utah, I have read or seen somewhere that UTAH has the most call center/customer service centers or jobs than any other state! I thought that was amusing. Another thing I heard, Utah has the most Network Marketing companies ran out of Utah! Crazy shizz!!! : D I LOVE IT! Speaking of one last thing, I try my hardest not to call customer service, I guess I feel their pain LOL, and I try to solve the issue myself before I call them. So please, be nice to your customer service agent. :)

In Entertainment News: Chris Brown, Elizabeth Taylor, Jon Bon Jovi

So I was driving to work today, like I do everyday and I was listening to my local radio station, they were first talking about Chris Brown, who has came out with a new album called F.A.M.E. and he is trying to promote it and the media is just throwing in his face about what happened with Rihanna. They were being rude about him wanting to promote his album and not wanting to talk about Rihanna. He is so upset about the whole thing and he supposedly destroyed a dressing room or something. I honestly feel sorry for him. He is just trying to move on with his life and does not want to keep hearing about his past! I am so on board with that, I have had a similar situation that I still faced with almost everyday. I am not sure how I feel about his blond hair though, he looks better with dark hair LOL! You Go Chris!



I was continuing to listen and I heard some sad news, Elizabeth Taylor passed away at the age of 79. She was best known as an astounding actress especially with her role as Cleopatra, married 8 times in her life time, her friendship with Michael Jackson, her perfume, and her activism for AIDS awareness. <3

Last but definitely not least, Jon Bon Jovi turns 49 today and does not look a day over 30! What a cutie patutie! :) I love his song Its My Life, and some of old stuff as well.
